TENDER & SPICY RACK OF LAMB
INGREDIENTS

  • 2 racks of lamb
  • 50g Greek Yoghurt
  • 25g cilantro leaves
  • 1 shallot
  • 2 cloves garlic
  • 1 tbsp salt
  • 1 tbsp paprika
  • ½ tbsp cayenne pepper
  • 1 tsp cardamom
  • 1 tsp cumin
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Juice and zest of 1 lime
METHOD

  1. Mix all the ingredients together in a mixing bowl.
  2. Put the racks of lamb in a shallow glass dish and place the mixture evenly and generously on all sides of the lamb racks.
  3. Cover the meat and let it sit in the refrigerator for 4 to 6 hours.
  4. Fire up your Broil King® and set the temperature to 94°C. Place the racks of lamb on the grids and let them grill for 3 hours.
  5. Before slicing and serving the racks, let them cool off for 10 minutes.
