TENDER & SPICY RACK OF LAMB
INGREDIENTS
- 2 racks of lamb
- 50g Greek Yoghurt
- 25g cilantro leaves
- 1 shallot
- 2 cloves garlic
- 1 tbsp salt
- 1 tbsp paprika
- ½ tbsp cayenne pepper
- 1 tsp cardamom
- 1 tsp cumin
- 1 tsp cinnamon
- ½ tsp nutmeg
- Juice and zest of 1 lime
METHOD
- Mix all the ingredients together in a mixing bowl.
- Put the racks of lamb in a shallow glass dish and place the mixture evenly and generously on all sides of the lamb racks.
- Cover the meat and let it sit in the refrigerator for 4 to 6 hours.
- Fire up your Broil King® and set the temperature to 94°C. Place the racks of lamb on the grids and let them grill for 3 hours.
- Before slicing and serving the racks, let them cool off for 10 minutes.
